NICOLAS CONRAUX : THE CHEF
A Chef with Star Quality
Nicolas Conraux trained at the Ecole Hôtelière in Strasbourg, where he met his wife Solène, before coming to Finistère in 1999. It was in the village of Plouider, near the town of Lesneven, that Solène’s father Hervé Bécam (then Chef at La Butte) initiated him into the secrets of the family business and invited him, in 2007, to express his creativity in the kitchen. Nicolas’ skill in the kitchen was rewarded in 2014 with a Michelin star which La Table de La Butte, gastronomic
restaurant presided over by its talented Chef, has since retained – to the delight of its clients’ taste buds!
A Michelin-starred Chef in the Family Tree
Chef Nicolas Conraux presides over the kitchen at La Butte. Tradition and a taste for fresh local products come together in his honest and authentic cuisine, which has been rewarded with a Michelin star. Together with his wife Solène, Nicolas has continued to build on the gastronomic foundations laid by the Bécam family in this region blessed with exceptional products and producers.
Dynamic, creative and passionate, Nicolas Conraux’s cuisine marries Alsatian and Breton culture and culinary traditions, and reveals a hint of spice from a childhood spent between the Indian Ocean and the French Antilles. His guiding principle: don’t follow trends, and always respect the inherent quality and the freshness and seasonality of local ingredients.
Through his love for fine local products and his respect for tradition and a rich culinary heritage (with a healthy pinch of verve and audacity thrown into the mix!) Nicolas Conraux proudly displays the colours of Brittany and Finistère.
